Rhubarb and Cheesecake!
Our very own caretaker and Westbury artist, Frances Fox, is a keen cook and can often be found in the kitchen cooking up various delicious delights.
I am often asked to taste test various dishes, which is always a treat!

During the colder months Wednesdays at Westbury are known as "Soup Wednesday" - Frances cooks a delicious warming soup often using ingredients from our own garden. So if you happen to call into Westbury on a Wednesday lunchtime you'll most likely find staff and artists sitting around the kitchen table devouring whatever tasty soup is on the menu!
I was delighted to receive this video from Frances showing us how we can bake a Rhubarb cheesecake.
Frances says:
"when lockdown first started, I decided I would try out new things and learn new skills. Wanting also to challenge my God-daughters, I took some videos of me cooking, intending to turn it into a film. The weeks went by and I never finished it, until in desperation after a bad week, and needing a distraction, I sat up late one night and got it done. Here’s the result"

This recipe is a BBC Good Food recipe and If you would like to have a go at making it here's a full list of ingredients used:
500g rhubarb, chopped into pieces (about 3-4 cm each)
150g caster sugar
juice and zest of 1 orange
1 vanilla pod
100g melted butter, plus a bit extra to grease the tin
200g ginger nut biscuits
500g marscapone or any soft cheese
100g thick natural yogurt
1 tbs pistachios, well chopped
